Critical knowledge lived in one person's head and in physical notebooks. When that person was out, production fell out of order. Unmeasured evaporation, mislabeled batches, and audit pressure for documented traceability.

Three weeks on the floor with the master rum-maker and operators. We modeled every stage: molasses → fermentation → distillation → barrel → bottling.

Each barrel with QR, each movement logged, each batch traceable from molasses to bottle. Auditable and exportable.

AI layer for evaporation and quality
Model trained on historical data to predict per-barrel evaporation by wood, warehouse position, and temperature. Alerts when a batch drifts from its expected profile.
